Easy Ham and Cheese Pinwheels


These appetizers are easy to make when you are too busy in the kitchen especially for the Holidays.


Makes about 18 to 20 

1 Refrigerated crescent rolls
4 to 6 thin slices of ham
2 1/2 teaspoons of mustard of your choice
Shredded cheddar cheese or mozzarella


Preheat oven at 400 degrees F.


Unroll crescent dough and seal the seams. Place ham slices on unrolled crescent dough spread mustard and add the cheddar or mozzarella cheese, ( I made them with mozzarella cheese).
Roll tightly and seal. Cut into 1/2 to 3/4 inch slices or you can bake it without cutting it. I made them both ways as you can see on the picture. Place them on a greased baking sheet. Bake for about 10 minutes or until lightly browned.

Green Beans with Slivered Almonds

This dish I made it for Thanksgiving, I was kind of got tired of the same green beans with french fried onions so I decided to make it different. Very easy.


I used about a little over a pound of string beans removed the strings and washed them. Then I placed them in a foil pan, (I use a lot of the foil pans when I cook a lot of food). Then I used a cup of water and mixed it with one envelope of the Lipton Recipe Secrets, Savory Herb with Garlic flavor mixed it in the green beans and topped it with Slivered Almonds and I baked it at 350 degrees for about 30 minutes or until green beans are tender.



Stuffing Mashed Potatoes Bake


This is what I made the day after Thanksgiving with the left overs. I had mashed potatoes and gravy and some stuffing so I placed them in a foil pan and baked them. 


I layered the mashed potatoes first then the gravy and then the stuffing and some gravy again. Then I topped it with shredded cheddar cheese that I had and baked it at 400 degrees for about 20 to 25 minutes or until the cheese is melted. I served  it with oven roast.

LinKev's Eggplant Parmesan





1 large eggplant
3 eggs beaten
1 1/4 cup of seasoned bread crumbs
2/3 cup grated parmesan cheese
8oz fresh mozzarella cheese cut in thin slices or shredded mozzarella
1 cup of sauce of you choice
salt to sprinkle
vegetable oil to fry add more if needed




Wash and slice eggplant to 1/8 inch thick circles.
Sprinkle with salt on one side and stack them up with the salt side up.
Let stand for about 10 minutes.
Heat enough oil in a skillet
Beat eggs in a small bowl in a flat dish mix bread crumbs and parmesan cheese. Dip eggplant both sides in egg and then in bread crumbs mixture and place in hot oil, cook until both sides of eggplant is browned, once cooked place in a lined paper towels plate.
Preheat oven at 400 degrees.
In a big enough baking dish spread a little sauce all around, line the eggplant on top of the sauce then spread a spoonful of sauce on top of eggplant, add a slice of mozzarella cheese and bake for about 10 minutes or until cheese is melted.


Serve on sandwich rolls, or over spaghetti with sauce
