My blog is all about mom's home cooking and sharing recipes with other bloggers. Since my mom's been gone I cook a lot of her food. She used to cook without measuring the ingredients and that's how she taught me, so it's a bit hard for me to write her recipes, so I've been trying to measure as a cook. So far I have succeeded by measuring the ingredients just right so it can taste the same as hers... Thanks and happy browsing.

Macaroni Cheese Bake In Coffin Toast Recipe

Serves 4
Ingredients
4 mini bread loaves, unsliced (I use Mini White Flour Loaf from Bakers Delight)
1 cup macaroni pasta
1 cup macaroni pasta
30 g butter
2 tbsp plain flour
1 1/2 cups milk
3/4 cup grated tasty / cheddar cheese
Method- Slice the white loaf lengthway to create the coffin cover and cut out the centre to make a hollow of about 5 cm (2 inches) deep. Repeat with the other three loaves. Set aside.

- Bring large saucepan of water to boil, gradually add macaroni, boil, uncovered, for about 12 minutes or until macaroni is tender; drain well.
- Melt butter in a large saucepan, stir in flour. Stir constantly over medium heat for about 2 minutes or until mixture is bubbly; do not allow mixture to brown.
- Remove from heat, gradually stir in milk. Return to heat, stir constantly over medium heat until the sauce boils and thickens slightly.
- Add cheese, stir until melted.
- Gently stir in macaroni.
- Divide macaroni into the hollow loaves, butter the edges of the loaves and sprinkle top with a little extra cheese.

- Place under hot grill for a few minutes or until lightly brown.

- Place a skeleton skull on top of the macaroni cheese bake and gently push it in.

Artichoke Mozzarella Chicken
Ingredients
2-4 Skinless, Boneless Chicken Breasts
1 cup Artichoke Hearts (rinsed, drained and chopped)
¾ cup Mozzarella Cheese, shredded (can substitute Parmesan)
¾ cup Mayonnaise (NOT the low fat stuff)
1 TBS Garlic Parsley (ground spice)
1 Steamed Red Bell Pepper (sliced or diced)
Preparation and cooking
Preheat Oven OR Big Green Egg to 375 degrees
Mix all ingredients (except the pepper)
Grease cooking pan
Place Breasts in pan and cover with mixture
Back for 35-45 minutes or until juices run.

(Linkev) Potato, tomato onion bake
the balsamic vinegar with some onions
and tomatoes so I put these ingredients
together and baked them.
If you try it let me know if you like it.
I liked it and my kids did too.
3 large potatoes cut in bite size
1 tomato cut in bite size
1 small onion sliced thin
1/4 teaspoon of crushed red pepper
1 1/2 teaspoons dry oregano
1 1/2 teaspoons garlic powder
1/2 cup balsamic vinegar
salt to taste
1 1/2 cup mozzarella
Preheat oven at 375 degrees F.
In a large bowl add all ingredients and
3/4 cup of mozzarella, mix all together.
Place in a baking dish add the remaining
mozzarella on top, cover and bake for
about 45 minutes or until potatoes are tender.
