My blog is all about mom's home cooking and sharing recipes with other bloggers. Since my mom's been gone I cook a lot of her food. She used to cook without measuring the ingredients and that's how she taught me, so it's a bit hard for me to write her recipes, so I've been trying to measure as a cook. So far I have succeeded by measuring the ingredients just right so it can taste the same as hers... Thanks and happy browsing.

Mom's Zucchini soup
This was one of her favorite dish. She would make a lot so she would eat it the next day and the next day. She would say that it was a healthy soup and that we should make it more often.
10 cups of water
5 chicken boullion cubes
1 beef boullion cube
5 zucchini peeled and diced small
3 small onions cut in thin slices
3 small potatoes peeled and diced small
1 (14. 5 ounce) can diced tomatoes)
Salt and black pepper to taste
4 to 6 fresh basil leaves
2 teaspoons garlic powder
olive oil to drizzle
grated Parmesan cheese to garnish.
In a large pot boil water add the chicken boulion.
Lower the heat to medium and add all the ingredients except the olive oil.
Cook on medium heat until potatoes are tender...Drizzle with olive oil and serve while hot. Sprinkle portions with grated parmesan cheese
Mom used to serve it sometimes with the small ditalini or
serve it with the italian bread...
