Cheesecake-Stuffed Strawberries

The annual Halloween party is coming up, and I usually bring 3 dishes with me to it. One the dishes is usually something sweet. Trying out different things, I think I know what I am finally making for the sweet dish. You guessed it these strawberries.

Ingredients
24 large strawberries, hulls removed
12 ounces cream cheese, at room temperature
2 teaspoon vanilla
6 tablespoons confectioners' sugar
1/2 cup almonds, chopped fine in the blender (optional)
1/2 Cup Graham Crackers crushed (optional)
1/8 teaspoon cinnamon
6oz chocolate chips melted (optional)

Directions
Place cream cheese in a bowl, and microwave for 30 seconds, so that it's soft. Whip together the cream cheese, vanilla, and sugar.

In the center of each strawberry, using a sharp knife, make a hole in each one, as deep as you can without going out the bottom. Spoon or pipe the filling into each hole. Dip cheesecake end of strawberry into chopped almonds, or graham crackers crumbs mixed with cinnamon making sure you completely cover the cheesecake filling with covering of your choice. Drizzle the melted chocolate over the berries as desired.

Lay strawberries in a pretty serving dish. Chill, and serve

Place cream cheese in a bowl, and microwave for 30 seconds, so that it's soft. Whip together the cream cheese, vanilla, and sugar. They do have the cheesecake cream cheese that available. I used that and it does give a stronger cheesecake taste to the filling, so if you want a really strong cheesecake flavor then I would suggest using that one instead plain, but you still need to do the sugar and vanilla.

Drizzle the melted chocolate over the berries as desired. I like the almonds, but a graham cracker is what most people associate with cheesecake, both are good depends on your taste. I love them drizzled with the chocolate, anything drizzled in chocolate is good if you ask me.

  1. I made these last night they were a hit, what a great idea to make these when you have a party, there is a little work to it but they are well worth it.
